So this month we're puttin' the spotlight on our Jambalaya Mix. One pot, one packet, and you got dinner for the whole house — or a tailgate that folks will remember.

Gameday Chicken & Sausage Jambalaya

Feeds 4 to 6 · One pot, about 30 minutes

YOU'LL NEED

1 packet Cousin Boudreaux's Jambalaya Mix — the rice is already in there, so don't add any
2 cups chicken stock (or water — but stock is better)
1 lb smoked sausage, sliced into coins
2 to 3 cups cooked chicken, pulled apart — a store-bought rotisserie chicken works great
Green onion tops, sliced thin, for the end

HOW TO MAKE IT

Brown the sausage coins in a heavy pot or cast iron skillet until the edges catch a little color. Leave that grease in the pot — that's flavor.
Add the chicken and stir it around a minute to warm through.
Add the packet of Jambalaya Mix and the 2 cups of stock. Give it one good stir.
Cover it, turn the heat down low, and leave it alone. Every time you lift that lid you let the steam out and the rice pays for it.
When the rice is tender, cut the heat and let it sit covered another 10 minutes. Fluff with a fork, scatter the green onion over the top, and carry the whole pot to the table.

Cousin Boudreaux says: Use chicken stock in place of the water. Same effort, deeper flavor. And once it's covered, don't stir it — stirrin' breaks up the rice and turns your jambalaya into porridge. Put the spoon down.
